I think I’m obsessed with matcha. I swapped my morning iced latte for matcha for a year and never looked back. I love earthy, delicious flavors that can be dressed up with different milks and flavors or sipped on their own in the simplest moments of the morning. As I have more and more matcha on hand, I’m always looking for new ways to accentuate its flavor. This matcha smoothie does just that.
Smoothies are a no-recipe recipe for me. I usually have an idea of the flavor profile I want in a smoothie and adjust it as I perfect it. Is it too thick? Add more liquid. Want a little more sweetness? Add more fruit. Are you missing an ingredient? Substitute another one. Smoothies should be fun and approachable for breakfast or as an afternoon pick-me-up. And with spring just around the corner, I wanted to take the strawberry matcha trend I’ve been seeing and bring it to life in smoothie form. Use this as a guide and take control in your kitchen.
Matcha smoothie ingredients
This smoothie has two layers: a matcha layer and a strawberry layer. Each layer has a slightly different composition to highlight each flavor.
For matcha layer:
- Matcha. Make sure you’re using a ceremonial matcha that you’ll actually want to drink. Culinary matcha has a grassy, bitter taste. Great for baked goods, but not so great for smoothies.
- Yogurt. If you want a bit of a protein boost, use unflavored, unsweetened plain or Greek yogurt.
- banana. I’ve tried smoothie thickeners that don’t add much flavor, but to be honest, banana works best every time. You may taste a little bit, but not much. You can also use frozen cauliflower or avocado if you like.
- ice. It helps keep everything cool and creates a thick texture.
For the strawberry layer:
- Fresh and frozen strawberries. It may seem like an afterthought, but the roles of both strawberries here are different. Fresh, seasonal strawberries are sweeter and have a great flavor. Frozen strawberries will help thicken your smoothie. Use what you have and replace it where you need it.
- Frozen coconut milk. If you only use part of the can of coconut milk, freeze the leftover in an ice cube tray and make a smoothie like this. Adds a nice creamy texture.
- vanilla. It’s optional, but I like the slightly floral flavor, with the addition of vanilla giving it a strawberry and cream vibe.
- ice. Add a little ice to thicken it and chill it.
Use your milk to thin both layers and make them easier to blend. I used Tace’s pistachio milk. If you want to add a little sweetness, add honey for a floral flavor.
Also, hot take: you should add salt to your smoothies! Just like adding salt to other foods, adding a pinch of salt can enhance the flavor and make it more delicious.

- Creating a thick smoothie layer will ensure that the two types of smoothies don’t sit on top of each other and mix into each other.
- If you prefer a thinner, easier-to-drink smoothie, start pouring the first layer. Then slowly pour the second layer onto the back of a spoon. Some of the smoothie may sink into other layers, but as you get closer to the top, it’s easier to create another layer for a layered color vibe.
